American fiddler Jay Ungar plays his share of lively, note-splattered dances, but his two most beloved compositions are slow, graceful waltzes: “Ashokan Farewell,” which suffused the soundtrack of Ken Burns’s The Civil War; and “The Lovers’ Waltz,” which arose from an improvisation one lazy Sunday morning with his wife, pianist-guitarist Molly Mason. Although these two well-known pieces can be played for dancers, they work best as concert pieces, when Ungar can take his time and play them most expressively.
